Sic et Simpliciter is a Latin phrase used in Italian to say “simply so”, no complications that require explanation. A wine with fresh and fruity characteristics that are genuine and untainted by the tertiary flavors of oak aging. A blend of the Estate’s French grape varietals that macerate and age in terracotta amphoras, a natural material with a porosity that is similar to wood for the aging of the wine, but without enhancing the wine with other flavors. The prestigious bottles are hand-numbered and the closure with sealing wax is also realized and imprinted by hand.

Fermentation: spontaneous fermentation followed by a long, 6 month maceration in earthenware jars or amphoras. The lees are then removed and the wine returns to the amphoras for aging

Nose: aromas of fresh cherry, black berries and currants and herbal notes
